  • Fresh herbs (like thyme or parsley) and lemon slices for stuffing the fish

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Stuff the fish cavity with fresh herbs and lemon slices.
  3. In a bowl, mix the salt, egg whites, and water until it forms a paste.
  4. Spread a thin layer of the salt mixture on a baking sheet. Place the fish on top, then cover the fish completely with the remaining salt mixture, pressing it around the fish to seal it.
  5. Bake for 25-30 minutes until the fish is cooked through (the salt crust will harden).
  6. Remove the fish from the oven and crack open the salt crust. Discard the crust and skin, and serve the fish with a squeeze of fresh lemon juice.
