1. Canned Tuna Pasta
Ingredients:
- 1 can (5 oz) tuna in olive oil (or water), drained
- 8 oz pasta (spaghetti or penne)

Instructions:

- Stir in the drained tuna, breaking it up with a spoon. Season with salt and pepper.
- Toss the cooked pasta into the sauce and mix well.
- Garnish with fresh parsley and serve.
2. Chickpea Salad
Ingredients:
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (5 oz) tuna (optional), drained
- 1 cucumber, diced
- 1 bell pepper, diced
- ¼ cup red onion, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley or cilantro for garnish
Instructions:
- In a large bowl, combine chickpeas, cucumber, bell pepper, and red onion. If using tuna, add it in as well.
- Drizzle olive oil and lemon juice over the mixture.
- Season with salt and pepper, then toss the salad to combine.
- Garnish with fresh parsley or cilantro.
- Serve chilled or at room temperature. It’s a light, refreshing dish that pairs well with grilled meats or on its own as a healthy lunch.
3. Canned Corn and Black Bean Tacos
Ingredients:
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn kernels, drained
- 1 teaspoon chili powder
- ½ teaspoon cumin
- 1 tablespoon olive oil
- 8 small tortillas
- 1 avocado, sliced
- Salsa, sour cream, and cheese for topping
Instructions:
- In a skillet, heat olive oil over medium heat. Add black beans, corn, chili powder, and cumin. Stir and cook for 5-7 minutes until heated through and well-seasoned.
- Warm the tortillas in a separate pan or microwave.
