1. Bread Pudding
Ingredients:
- 6 cups stale bread, cubed (French or challah works well)
- 4 cups milk
- 4 large eggs
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- ½ cup raisins or chocolate chips (optional)
- Butter for greasing the baking dish
Instructions:
- Preheat the oven to 350°F (175°C). Grease a baking dish with butter.
- In a large bowl, whisk together milk, eggs, sugar, vanilla extract, cinnamon, and salt.
- Add the cubed bread to the mixture, stirring to combine. Let it sit for about 10 minutes to allow the bread to soak up the liquid.
- If using, fold in raisins or chocolate chips.
- Pour the mixture into the prepared baking dish, spreading it evenly.
- Bake for 45-55 minutes, or until the top is golden brown and the center is set. Let it cool slightly before serving.
2. French Toast
Ingredients:
- 4 slices of bread (thick-cut works best)
- 2 large eggs
- ½ cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- Butter for cooking
- Maple syrup for serving
- Fresh fruit (optional)
Instructions:
- In a shallow bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon.
- Heat a skillet or griddle over medium heat and add a little butter to coat the surface.
- Dip each slice of bread into the egg mixture, allowing it to soak for a few seconds on each side.
- Place the soaked bread on the skillet and cook for 2-3 minutes per side until golden brown.
- Serve warm with maple syrup and fresh fruit, if desired.
3. Bruschetta with Tomatoes and Basil
Ingredients:
- 1 baguette or loaf of crusty bread, sliced
- 2 cups ripe tomatoes, diced
- 1 clove garlic, minced
- 1/4 cup fresh basil, chopped
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- Salt and pepper to taste
- Additional olive oil for drizzling
Instructions:
- Preheat the oven to 400°F (200°C). Arrange the sliced bread on a baking sheet.
- Brush the bread slices lightly with olive oil and toast in the oven for about 5-7 minutes, or until golden and crispy.
- In a bowl, combine diced tomatoes, minced garlic, chopped basil, balsamic vinegar, olive oil, salt, and pepper. Mix well.
- Top each toasted bread slice with a spoonful of the tomato mixture.
- Serve immediately as an appetizer or snack, drizzled with a little extra olive oil if desired.
