1. Canned Tuna Pasta

  • 1 can (5 oz) tuna in olive oil (or water), drained
  • 8 oz pasta (spaghetti or penne)

Instructions:

  1. Cook the pasta according to package instructions. Drain and set aside.

2. Chickpea Salad

Ingredients:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (5 oz) tuna (optional), drained
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • ¼ cup red onion, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish

Instructions:

  1. In a large bowl, combine chickpeas, cucumber, bell pepper, and red onion. If using tuna, add it in as well.
  2. Drizzle olive oil and lemon juice over the mixture.
  3. Season with salt and pepper, then toss the salad to combine.
  4. Garnish with fresh parsley or cilantro.
  5. Serve chilled or at room temperature. It’s a light, refreshing dish that pairs well with grilled meats or on its own as a healthy lunch.

3. Canned Corn and Black Bean Tacos

Ingredients:

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn kernels, drained
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • 1 tablespoon olive oil
  • 8 small tortillas
  • 1 avocado, sliced

Instructions:
