Instructions:

- Spread a thin layer of the salt mixture on a baking sheet. Place the fish on top, then cover the fish completely with the remaining salt mixture, pressing it around the fish to seal it.
- Bake for 25-30 minutes until the fish is cooked through (the salt crust will harden).
- Remove the fish from the oven and crack open the salt crust. Discard the crust and skin, and serve the fish with a squeeze of fresh lemon juice.
